Fresh Spinach and Fenugreek Greens Saag
Ingredients
- 1 bunch spinach
- 1 cup fenugreek leaves
- optional: few coriander leaves
- 2 onions
- few garlic cloves
- 1 piece ginger
- green chillies
- ghee
- optional: whole red chilli
- a pinch of cinnamon powder
- salt
- optional: boiled corn or paneer
- red chilli powder
Preparation
Clean and wash a bunch of spinach and a cup of fenugreek leaves.
Blanch them and grind into a smooth paste.
Optionally, grind a few coriander leaves along with it.
Take 2 onions, a few garlic cloves, a piece of ginger, and green chillies, then grind into a paste.
Heat some ghee in a wok and add an optional whole red chilli, a pinch of cinnamon powder, and the onion paste.
Cook until all extra water evaporates.
Add salt and the spinach and fenugreek puree, then cook for 2-3 minutes.
It is done; optionally add boiled corn or paneer.
For extra flavor, add a second tadka with ghee and some red chilli powder.
