Fresh Spinach and Fenugreek Greens Saag

Ingredients

  • 1 bunch spinach
  • 1 cup fenugreek leaves
  • optional: few coriander leaves
  • 2 onions
  • few garlic cloves
  • 1 piece ginger
  • green chillies
  • ghee
  • optional: whole red chilli
  • a pinch of cinnamon powder
  • salt
  • optional: boiled corn or paneer
  • red chilli powder

Preparation

  1. Clean and wash a bunch of spinach and a cup of fenugreek leaves.

  2. Blanch them and grind into a smooth paste.

  3. Optionally, grind a few coriander leaves along with it.

  4. Take 2 onions, a few garlic cloves, a piece of ginger, and green chillies, then grind into a paste.

  5. Heat some ghee in a wok and add an optional whole red chilli, a pinch of cinnamon powder, and the onion paste.

  6. Cook until all extra water evaporates.

  7. Add salt and the spinach and fenugreek puree, then cook for 2-3 minutes.

  8. It is done; optionally add boiled corn or paneer.

  9. For extra flavor, add a second tadka with ghee and some red chilli powder.
