Grain-Free Banana Muffins

Ingredients

  • 2 tbsp olive oil
  • 2 eggs
  • 2 tbsp plain yogurt
  • 1 tsp vanilla extract
  • 2-3 tbsp xylitol (or coconut sugar or honey)
  • 2 ripe bananas, mashed
  • 1/2 cup chickpea flour
  • 2 tbsp protein powder
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Crushed pecans (for topping)

Preparation

  1. In a bowl, whisk olive oil and eggs until well combined.

  2. Add plain yogurt, vanilla extract, and xylitol (or coconut sugar or honey) to the bowl. Whisk well.

  3. Mash the ripe bananas and add them to the bowl. Mix well.

  4. In a separate bowl, mix chickpea flour, protein powder, baking powder, bicarbonate of soda, cinnamon, and salt.

  5. Add the dry ingredients to the wet ingredients and mix until well combined.

  6. Preheat the oven to 180°C (350°F).

  7. Place the batter into a lined muffin tin, filling each cup about three-quarters full.

  8. Top each muffin with crushed pecans.

  9. Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into the center of a muffin comes out clean.

  10. Once baked, allow the muffins to cool slightly before enjoying.
