Grilled Peanut Coconut Satay Skewers

Ingredients

  • 2 blocks firm tofu, cut into 3/4 inch pieces
  • 1 can coconut milk
  • 1/4 cup peanut butter
  • 1 tbsp red curry paste
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 8-10 skewer sticks

Preparation

  1. Make sure tofu has been well pressed to absorb as much flavor as possible; typically wrap in a tea towel and place a heavy object on top for a few hours.

  2. In a blender, mix together all other ingredients to combine well.

  3. Reserve 1/2 cup of sauce for dipping.

  4. Place tofu in a large bowl with sauce and leave to marinate for as long as possible, preferably overnight in the fridge.

  5. Place on skewers and reserve remaining marinade for basting on grill.

  6. Lightly grease grill, heat to medium and cook tofu for about 4-5 minutes on each side, basting often.

  7. Serve with extra sauce for dipping.
