Lechon Asado


  • 2.5 pound pork shoulder
  • 12-16 cloves garlic (really!)
  • 1 small white onion, cut into rings
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 2 tbsp lemon juice
  • 2 tbsp lime juice
  • 2 tsp black pepper
  • 1 tsp salt
  • pinch ground clove


  1. When it's done, shred, mix it a bit to combine everything, and a cook another hour

  2. This is traditionally served with rice, black beans, yucca, and plantains, some of which are fine for energy modification, but otherwise it goes well over riced cauliflower or lettuce

  3. I served it over baby arugula, with cherry tomatoes, guacamole, and a squirt of lime juice
