Lemon Cake with Buddhas Hand
Ingredients

- 150g apple puree
- 1tsp apple cider vinegar
- 50ml heatable oil
- 100ml plant milk
- 50g agave syrup (or other)
- 50g xylitol/sugar/coconut blossum sugar
- 200g spelt/wheat flour (or gf flour mix)
- 50g corn starch
- 1/3 tsp baking soda
- 2 tsp baking powder
- 1 pinch of salt
- optional: glaze with frosting ( 3tbsp powdered sugar + a tiny bit of water).
Preparation
Preheat the oven to 180°C/350°F upper and lower heat. Mix all ingredients to a smooth dough and spread it in an oiled box shape. Bake for about 45 min

I used a little bit of buddhas hand - roasted small pieces in xylitol and used them as a topping as well
