Lemon Cake with Buddhas Hand

Ingredients

  • recipe:
  • 150g apple puree
  • 1tsp apple cider vinegar
  • 50ml heatable oil
  • 100ml plant milk
  • 50g agave syrup (or other)
  • 50g xylitol/sugar/coconut blossum sugar
  • 200g spelt/wheat flour (or gf flour mix)
  • 50g corn starch
  • 1/3 tsp baking soda
  • 2 tsp baking powder
  • 1 pinch of salt
  • optional: glaze with frosting ( 3tbsp powdered sugar + a tiny bit of water).

Preparation

  1. Preheat the oven to 180°C/350°F upper and lower heat. Mix all ingredients to a smooth dough and spread it in an oiled box shape. Bake for about 45 min

  2. Optional: glaze with frosting ( 3tbsp powdered sugar + a tiny bit of water)

  3. I used a little bit of buddhas hand - roasted small pieces in xylitol and used them as a topping as well
