Lentil Burger with Cherrie Tomatoes, Mushrooms, Onions, Avocado, Spinach and Cashew Sauce

Ingredients

  • 1 cup of cooked red lentils 1/2 cup of canned chick peas
  • 1/2 cup of grated sweet potato
  • 1/2 cup of sliced mushrooms
  • 1/2 cup of grated zucchini
  • 1 1/2teaspoon of salt
  • 1 cup almond meal
  • 1 tablespoon parsley
  • Pepper
  • 2 cloves garlic crushed
  • 1 tablespoon of olive oil (use extra to brush patties before they go in the oven

Preparation

  1. In a saucepan add 1 tablespoon of olive oil, 1 teaspoon of salt, garlic, pepper and all the vegetables and sauté for 10 minutes. Set aside to cool

  2. In a blender add your red lentils, chickpeas, parsley 1/2 teaspoon of salt, pepper, 1 crushed garlic and almond meal. When the mixture is cool add it to the blender and mix until everything is combined. If the mixture appears a bit soft add more almond meal. Once patties are made line a baking tray and brush with olive oil. Cook for 20 minutes turning them half way and brushing them with olive oil
