Outrageously Smooth Hummus

Ingredients

  • chickpeas
  • TSP of baking soda
  • salt and lemon
  • tahini
  • ice cold water

Preparation

  1. Soak the chickpeas overnight

  2. Pressure cook them with a TSP of baking soda (that helps to loosen the skin of the chickpeas)

  3. Peel the chickpeas*

  4. Blend with salt and lemon

  5. Add the tahini (sesame paste) and blend

  6. Add ice cold water, to adjust the consistency and blend.* Steps 3 and 6 will make all the difference in the texture of your hummus
