Peanut Butter & Jelly Oatmeal Cups
Ingredients
- 2 small ripe bananas
- 2 1/2 cups rolled oats (gluten-free)
- 2 tbsp oat flour
- 1 egg
- 1/2 cup peanut butter
- 1/2 cup slightly softened coconut oil (or softened butter/applesauce)
- 1/4 cup coconut sugar
- Splash of vanilla extract
- 1/4 cup jam (blueberry jam, cooked with chia seeds and water)
- 1/4 cup additional peanut butter
Preparation
Preheat the oven to 350°F (175°C).
In a bowl, whisk the egg.
Mash the ripe bananas and add them to the bowl with the egg.
Add rolled oats, oat flour, peanut butter, softened coconut oil, coconut sugar, and vanilla extract. Mix well with a spatula (avoid using a stand mixer to prevent blending the oats).
Line a muffin tin with liners to make 12 cups.
Divide the oat mixture equally into the muffin cups.
Top each oatmeal cup with a spoonful of jam and a spoonful of peanut butter.
Optionally, you can press your thumb into the top of each cup and add the jam and peanut butter into the indentation.
Bake in the preheated oven for 25 minutes.
Allow the oatmeal cups to cool, then remove them from the muffin tin.
