Quick Gluten-Free Skillet Pizza

Ingredients

Crust

  • 21 grams cassava or coconut flour
  • 2 jumbo or large egg whites (70 grams) or approximately 3 small or medium egg whites
  • 1-2 tablespoons Italian seasoning
  • 45 grams all-purpose flour (gluten-free if desired)
  • 100 grams (about 1/3 cup) 0% Greek yogurt
  • 3 grams baking powder (1 teaspoon)
  • Dash of sea salt

Toppings

  • 1/4 cup pizza sauce
  • 1/3 cup shredded mozzarella
  • 7 turkey pepperonis

Preparation

  1. Preheat oven to 400 degrees Fahrenheit

  2. Mix together the crust ingredients and place in a greased skillet pan

  3. Bake for 10 minutes, then remove the skillet from the oven

  4. Add the toppings

  5. Bake for an additional 5 to 6 minutes until the cheese is melted

  6. Slice and enjoy
