Rice Balls
Ingredients
- 1 sweet potato grated
- 1 zucchini grated
- 2 crushed garlic cloves
- 2 cups of uncooked rice
- 1 cup wholemeal bread crumbs (extra for rolling rice balls)
- 2 tablespoons of parsley
- 1 teaspoons of salt
- pepper
- sunflower oil for frying
Preparation
Sauté all the vegetables, garlic and parsley for 5 minutes
Add mixture to the cooked rice and add 1 cup of breadcrumbs and combine
Roll into balls (i weigh them at 40 grams each) then coat with bread crumb
Fry and place on parchment paper
