Rice Balls

Ingredients

  • 1 sweet potato grated
  • 1 zucchini grated
  • 2 crushed garlic cloves
  • 2 cups of uncooked rice
  • 1 cup wholemeal bread crumbs (extra for rolling rice balls)
  • 2 tablespoons of parsley
  • 1 teaspoons of salt
  • pepper
  • sunflower oil for frying

Preparation

  1. Sauté all the vegetables, garlic and parsley for 5 minutes

  2. Add mixture to the cooked rice and add 1 cup of breadcrumbs and combine

  3. Roll into balls (i weigh them at 40 grams each) then coat with bread crumb

  4. Fry and place on parchment paper
