Salmon Salad Wit Lemon Tahini Dressing

Ingredients

  • wild caught salmon
  • salt, pepper, and paprika
  • zucchini
  • sweet potatoes
  • Baby kale
  • 2 tbsp tahini, juice from 1 lemon, 1 tsp minced garlic, 2 tsp water

Preparation

  1. Salmon salad wit lemon tahini dressing

  2. Wild caught salmon cooked for 4 min each side over medium heat on the stove top. Seasoned with salt, pepper, and paprika

  3. Roasted zucchini and sweet potatoes

  4. Baby kale

  5. Dressing: 2 tbsp tahini, juice from 1 lemon, 1 tsp minced garlic, 2 tsp water (makes about 2-3 servings)
