Salt and Pepper Chicken Wings
Ingredients
- 10-12 chicken wings (approx 1kg)
- 2 tsp toasted sesame oil
- 1/3 cup cornflour
- 1 tsp salt
- 1/2 tsp white pepper (black pepper is fine)
- 500ml vegetable oil for deep frying
- 1 tbsp finely chopped ginger
- 1 tbsp finely chopped garlic
- 4 red fresh chillies sliced
- 4 good size spring onions sliced
Preparation
Pat the chicken wings dry with some paper kitchen towel and put them into a mixing bowl. Add the sesame oil and mix together with your hands, making sure all the wings are coated. Put the oil in a wok or another pot appropriate for frying and turn on to heat to medium high.
Get two plates, cover one with kitchen towel and on the other put the cornflour, salt and pepper and mix together. Coat the wings a few at a time and fry in two or three batches depending on the size of the pan.
Fry for 4 mins, turning halfway through. Remove and put on the plate with kitchen towel.
Turn the heat up high and fry in batches again until crispy golden brown. Rest the wings back on the plate with a clean piece of kitchen towel. Remove the oil from the heat.
Put a clean wok on the hob, high heat, add a tablespoon of vegetable oil, then the ginger, garlic, red chillies and spring onions, a pinch of salt and pepper and stir fry for 2-3 mins, add the wings and toss in the aromats for a couple of mins before turning out onto a plate. Enjoy x
