Sinir Handesh
Ingredients
- 2 cups plain flour
- 1/2 cup rice flour (optional, or just use more plain flour if you can't get this)_
- 1 cup Muscavado sugar
- 1/4 - 1/2 cup granulated sugar (adjust to taste)_
- water as needed
Preparation
In a bowl measure the plain flour, rice flour (if you're using this), muscavado + granulated sugar
Whisk together
Gradually add water to the ingredients till you have a smooth batter, the batter shouldn't be too thick or too thin (watch my stories)
Leave the batter covered to rest for 1 hour before frying
Heat oil in a wok or similar round pan, you'll need a fair amount as the handesh are deep fried
Test by dropping a little batter into the oil, if it comes up straight away the oil is hot enough
Using a small cup or round ladle, pour small amounts of the batter into the hot oil, the handesh should take 20 seconds or so to rise to the surface, pour oil over it to help it puff up fully
Once browned on one side, flip over and fry for a few minutes on the other side
Remove on paper towels to absorb excess oil
Serve with hot tea and enjoy! ?
