Slow Cooker Cuban Lechon Asado

Ingredients

  • 2.5 pound pork shoulder
  • 12-16 cloves garlic
  • 1 small white onion
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 2 tbsp lemon juice
  • 2 tbsp lime juice
  • 2 tsp black pepper
  • 1 tsp salt
  • Pinch ground clove

Preparation

  1. Place all ingredients in the slow cooker and cook on low for about 8 hours until fork tender and falling apart.

  2. Shred the meat, mix to combine everything, and cook for another hour.

  3. Serve traditionally with rice, black beans, yucca, and plantains, or alternatively over riced cauliflower, lettuce, baby arugula, with cherry tomatoes, guacamole, and a squirt of lime juice for variations.
