Strawberry Muffins

Ingredients

  • 2 cups of spelt
  • wholewheat or all purpose gluten free flour 1 cup of soy or cashew milk 2 tsp of baking powder 1/4 tsp baking soda 1 tsp of apple cider vinegar 1/2 cup of melted coconut oil 1 tsp of vanilla extract 1/2 cup of coconut sugar ( I pulsed mine in the vitamix to make it extra fine for perfect muffins. Alternatively you can use regular sugar ) 1 1/4 cup of chopped strawberries

Preparation

  1. In a bowl combine milk and cider vinegar

  2. Leave a while for milk to curdle

  3. In a separate bowl combine flour, baking powder and soda, salt and set aside

  4. Mix together coconut sugar, coconut oil and vanilla extract

  5. Then add the milk and cider vinegar and stir well until evenly combined

  6. Lastly add the dry ingredients and gently fold mixture until well combined

  7. Add in the chopped strawberries

  8. Spoon mixture into lined muffin tins about 3/4 full and bake in the oven for around 20-25 mins at 170c

  9. Once nicely brown and risen remove from oven and allow to cool
