Vegan Almond Coconut Cookies


  • 2 cups almond meal/flour
  • 2/3 cup coconut flakes
  • 4 tbsp granulated coconut sugar
  • 2 tsp baking powder
  • 5 tbsp almond milk
  • Optional: desiccated coconut for topping


  1. Preheat the oven to 175°C (350°F).

  2. In a bowl, combine the almond meal/flour, coconut flakes, granulated coconut sugar, and baking powder.

  3. Add the almond milk to the dry ingredients and mix until everything sticks together.

  4. Form little cookies by rolling the dough between your hands. Place the cookies on a parchment-lined baking sheet.

  5. Optional: Sprinkle desiccated coconut on top of each cookie.

  6. Bake in the preheated oven for exactly 15 minutes.

  7. Once baked, remove from the oven and let the cookies cool before serving.
