Vegan Christmas Dessert

Ingredients

  • 1 cup desiccated coconut to roll the balls in
  • 2 tbsp pure maple syrup
  • 1 cup vegan butter
  • 1/4 cup coconut sugar
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup roasted or regular almonds
  • pinch of salt

Preparation

  1. First, preheat the oven to 180°C

  2. Line a baking sheet with parchment paper and put it aside

  3. Use the paddle attachment of a regular stand up mixer and mix together the vegan butter, sugar, maple syrup, salt and vanilla

  4. Next, add the flour and mix until well combined

  5. After that add the roasted almonds (either roast them yourself in the oven for a few minutes or buy already roasted ones or just use regular ones) Mix well since some of the nuts can get stuck in the bottom of the bowl

  6. Roll the dough into little balls

  7. Place them on a baking sheet and bake for 25-30 minutes until a tooth pick inserted in the middle comes out clean

  8. Let them cool down a bit

  9. Now, just roll the balls in the desiccated coconut and try to cover the balls with it
