Vegan Sweet Potato Pizza

Ingredients

Bottom layer

  • 1 small sweet potato
  • 2/3 cup oat flour
  • 1/3 cup buckwheat flour
  • 2 tsp baking powder
  • 1/2 tsp paprika powder
  • 1/2 tsp salt + pepper
  • 1 tsp dried basil

Tomato sauce

  • 1/2 box canned tomatoes
  • 1 small onion
  • 1 clove garlic
  • 1/2 red chili
  • 2 tsp dried basil
  • salt + pepper (to taste)

Cheese sauce

  • 1 cup (thick) coconut milk
  • 4 tbsp nutritional yeast
  • 2 tbsp buckwheat flour
  • 1/2 tsp paprika powder
  • 1/2 tsp salt

Preparation

  1. Roast potato in oven until tender and add to a food processor with all bottom-layer ingredients. Mix well, put onto a baking tray covered in oil and spread out using your fingers dipped in water. Bake for 20 minutes on 200C.

  2. Put all ingredients for the tomato sauce in the food processor and blend until evenly mixed.

  3. Add all ingredients for the cheese sauce to a saucepan except the flour, bring to a boil and let simmer for 4-5 minutes. Remove from heat, add flour and mix until you get a creamy or thickened consistency.

  4. Layer tomato sauce and cheese sauce on the bottom layer plus any toppings you prefer and bake in oven for 20 more minutes.
