Smoked Osso Buco with Beef Shank
Ingredients
- Beef shank
- Onion
- Tomatoes
- Celery
- Carrots
- Garlic
- Thyme
- Rosemary
- Oregano
- Red wine
- Olive oil
- Salt
- Pepper
Preparation
Prepare the vegetables and herbs.
Season the beef shank with salt and pepper 30-40 minutes before grilling and grill for 30-40 minutes.
Sauté the onion and garlic in olive oil, then add rosemary and oregano and cook for 10-15 minutes.
Add all remaining ingredients except tomatoes and a bottle of red wine, then smoke for at least 2 hours.
Add the tomatoes and continue smoking for another 40-50 minutes.
Notes
Total cooking time is approximately 3-4 hours.
