Smoked Osso Buco with Beef Shank

Ingredients

  • Beef shank
  • Onion
  • Tomatoes
  • Celery
  • Carrots
  • Garlic
  • Thyme
  • Rosemary
  • Oregano
  • Red wine
  • Olive oil
  • Salt
  • Pepper

Preparation

  1. Prepare the vegetables and herbs.

  2. Season the beef shank with salt and pepper 30-40 minutes before grilling and grill for 30-40 minutes.

  3. Sauté the onion and garlic in olive oil, then add rosemary and oregano and cook for 10-15 minutes.

  4. Add all remaining ingredients except tomatoes and a bottle of red wine, then smoke for at least 2 hours.

  5. Add the tomatoes and continue smoking for another 40-50 minutes.

Notes

  1. Total cooking time is approximately 3-4 hours.
