Breaded Chicken with Tomato Sauce and Cheese

Ingredients

  • 2 large eggs
  • 1/2 cup flour
  • 2 cups breadcrumbs
  • 3 pieces chicken fillet
  • 1 teaspoon chicken spice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Tomato sauce

  • 3 tablespoons olive oil
  • 3 stalks green onion, chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, finely chopped
  • 4 medium tomatoes, peeled and finely chopped
  • 2 tablespoons tomato paste
  • 2 teaspoons oregano
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 cups water

For serving

  • Cheese (Akkawi, mozzarella, or gouda)

Preparation

  1. In a skillet, heat the oil and add the onion, celery, and garlic. Stir the mixture for a few minutes to sauté and develop good flavor.

  2. Add the tomatoes, tomato paste, oregano, salt, and black pepper. Stir the ingredients together, then add the water. Cover the skillet and cook for a few minutes until fully cooked.

  3. Prepare the chicken: in a dish, place the flour and add some chicken spice; set aside.

  4. In another dish, place the eggs and add some black pepper; beat lightly and set aside.

  5. In a dish, place the breadcrumbs with oregano.

  6. Coat a piece of chicken fillet in flour for a light layer, then dip in egg, then in breadcrumbs.

  7. Heat oil in a wide skillet.

  8. Place the chicken fillet in the oil and cook for a few minutes, then flip to the other side to cook completely.

  9. Place the cooked fillet over the sauce, cover the skillet, and let it absorb the sauce for a few minutes.

  10. Cut the desired cheese into thin slices, place over the fillet, cover, and heat until the cheese melts, then serve immediately.

Tips

  1. You can add rosemary leaves to the sauce for better flavor.
