Christmas Quinoa and Green Bean Salad

Ingredients

  • 2 cups of cooked quinoa
  • 1 can of chickpeas, drained and rinsed
  • 1 sweet potato or pumpkin, diced and roasted
  • 1 red onion, diced and roasted
  • 200g green beans, steamed or boiled
  • 1/2 cup of dried cranberries
  • 1/2 cup of almonds
  • Salt
  • Pepper
  • Olive oil for dressing

Preparation

  1. Prepare the quinoa ahead of time by cooking it in boiling water.

  2. Cook the diced red onion and sweet potato in the oven for 40 minutes at 200 degrees.

  3. Chop the green beans and steam or boil them.

  4. Combine the vegetables, quinoa, chopped nuts, cranberries, and chickpeas or lentils.

  5. Season with salt, pepper, and olive oil.

Tips

  1. You can prepare the veggies and quinoa the day before and assemble it all on the day of Christmas.
