Light Airy Chocolate Mousse

Ingredients

  • 200 g dark chocolate
  • 1 pinch salt
  • 2 eggs
  • 2 tablespoons sugar
  • 400 g heavy cream

Preparation

  1. Chop dark chocolate and melt in a double boiler

  2. Let the melted chocolate cool slightly

  3. Separate the eggs

  4. Beat egg yolks with salt and 1 tablespoon sugar until creamy (about 3-4 minutes)

  5. Whip heavy cream until stiff and chill

  6. Whip egg whites with 1 tablespoon sugar until very stiff

  7. Add melted chocolate to egg yolks and stir well to avoid lumps

  8. Fold egg whites into the chocolate mixture, being careful not to let too much air escape

  9. Gently fold in the whipped cream

  10. Pour into serving bowls and chill for at least 5 hours or overnight until set
