Moist Mulled Wine Chocolate Bundt Cake

Ingredients

Cake

  • 250 g softened butter
  • 180 g sugar
  • 1 packet vanilla sugar
  • a pinch of salt
  • 4 eggs
  • 250 g all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 packet baking powder
  • 200 ml mulled wine (or red wine)
  • 200 g chocolate shavings
  • softened butter for greasing the pan

Sugar glaze

  • 200 g confectioners' sugar
  • 3 tablespoons mulled wine (or red wine)

Preparation

  1. Preheat the oven to 180°C (convection: 160°C) and grease a 22 cm Bundt pan

  2. Beat the softened butter with vanilla sugar, sugar, and salt until fluffy

  3. Mix in the eggs

  4. In a separate bowl, combine the flour, baking powder, and cocoa powder

  5. Alternately mix the mulled wine and the flour mixture into the batter

  6. Fold in the chocolate shavings

  7. Pour the batter into the prepared pan and smooth the top

  8. Bake for about 45 minutes

  9. Let the cake cool completely

  10. Invert the Bundt cake onto a wire rack and turn it once so the narrow part is facing up

  11. Whisk the confectioners' sugar with mulled wine to make a glaze and pour it over the cake

  12. Let the glaze set for about 30 minutes

Tips

  1. For a non-Christmas season alternative, substitute red wine for mulled wine to achieve the same moist result
