Fatteh with Meat and Yogurt

Ingredients

  • 1 kg chopped meat
  • 2 small onions chopped
  • 1 tsp whole black pepper
  • 3 cinnamon sticks
  • 2 bay leaves
  • 1 tbsp salt
  • 2 cups short-grain rice
  • 4 tbsp corn oil
  • 2 tsp salt
  • 3 cups meat broth

For serving

  • toasted bread
  • fried pine nuts

Yogurt mixture

  • 4 cups yogurt (labneh or milk)
  • 4 cloves crushed garlic
  • 1 tsp salt

Preparation

  1. To boil the meat, in a wide pot put about 2 liters of water, let it boil then add meat pieces, add onion, whole pepper, cardamom, bay leaves, and cinnamon sticks, let the meat cook, drain the meat and keep the broth aside.

  2. To prepare the rice, in a medium-sized pot heat the oil, add the rice then add the meat broth, let the rice cook and set aside.

  3. To sear the meat, in a skillet heat some oil or ghee, sear the boiled meat pieces and set aside.

  4. In a suitable serving dish, place the toasted bread, spread hot broth, then add a layer of warm or hot rice.

  5. To prepare the yogurt, add garlic cloves and mix well then spread it over the rice.

  6. Spread the meat pieces over the yogurt, fry the pine nuts until golden then spread them over the fatteh and serve immediately.
