Mexican Nachos with Chili Beans
Ingredients
- 4 cloves of garlic
- 1 onion
- 2 teaspoons of paprika
- 2-3 teaspoons of chili
- 2 teaspoons of coriander
- 100g mushrooms
- 2 snack peppers, 150g
- 1/2 eggplant
- 400g chili beans (1 can)
- 2 cans of tomatoes
- Nachos chips
- 100g shredded cheese (vegan)
- Salt & pepper
Preparation
Fry finely chopped garlic and onions in a cast-iron skillet.
Add the spices and cook for 1 minute.
Add the chopped mushrooms, snack pepper and eggplant, then cook for 5 minutes.
Drain the chili beans and pour them into the pan with 2 cans of tomatoes.
Taste and add seasonings if needed.
Cover the pan with nachos chips and shredded cheese.
Drizzle with salt and pepper.
Bake for 10 minutes at 200°C with hot air.
Serve with avocados and lime.
