Mexican Nachos with Chili Beans

Ingredients

  • 4 cloves of garlic
  • 1 onion
  • 2 teaspoons of paprika
  • 2-3 teaspoons of chili
  • 2 teaspoons of coriander
  • 100g mushrooms
  • 2 snack peppers, 150g
  • 1/2 eggplant
  • 400g chili beans (1 can)
  • 2 cans of tomatoes
  • Nachos chips
  • 100g shredded cheese (vegan)
  • Salt & pepper

Preparation

  1. Fry finely chopped garlic and onions in a cast-iron skillet.

  2. Add the spices and cook for 1 minute.

  3. Add the chopped mushrooms, snack pepper and eggplant, then cook for 5 minutes.

  4. Drain the chili beans and pour them into the pan with 2 cans of tomatoes.

  5. Taste and add seasonings if needed.

  6. Cover the pan with nachos chips and shredded cheese.

  7. Drizzle with salt and pepper.

  8. Bake for 10 minutes at 200°C with hot air.

  9. Serve with avocados and lime.
