Chocolate Chip Cookie Dough Cups
Ingredients
Cookie dough
- 1.5 c flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 c room temp vegan butter
- 1/2 c white cane sugar
- 1/2 c brown sugar
- 1/4 c plant milk
- 1 heaping tbsp vanilla
- huge handful choc chips
Chocolate shell
- equal parts melted virgin coconut oil
- cocoa or cacao powder
- maple syrup to taste (~1/4 cup)
- 1/2 tsp salt
Preparation
Mix together the dry ingredients for the cookie dough
In a separate bowl, mix together the wet ingredients for the cookie dough
Combine the wet and dry mixtures then add chocolate chips
For the chocolate shell, combine equal parts melted virgin coconut oil, cocoa or cacao powder, maple syrup to taste, and salt; mix until smooth
Add paper muffin tin cups to a muffin tin and spoon about 1 tablespoon of chocolate mixture into each cup base
Refrigerate until solid, about 10 minutes
Remove from fridge and add cookie dough to the middle of each cup using a spoon or piping bag, then press down to flatten
Pour more melted chocolate over the dough to cover, just enough to close the cups
Refrigerate or freeze until firm
