Traditional German Jam-Filled Christmas Cookies
Ingredients
Dough
- 200 g butter, softened
- 300 g all-purpose flour, plus extra for dusting
- A pinch of salt
- 100 g blanched ground almonds
- 150 g granulated sugar
- 1 packet vanilla sugar
- 2 large eggs
Filling and decoration
- 200 g red currant jam
- Powdered sugar, for dusting
Preparation
Combine butter, flour, salt, ground almonds, sugar, and eggs in a bowl; knead until a dough forms, using hands if needed. Chill for 30 minutes
Roll out the dough on a floured surface. Cut out 4 cm circles with a scalloped-edge cutter. Place half of the circles (solid) on a parchment-lined baking sheet. Cut a small hole in the center of the remaining circles using a 1-1.5 cm cutter and place them on the baking sheet
Preheat oven to 180°C conventional or 160°C convection. Bake for 8-10 minutes until set but not browned. Cool completely on the baking sheet
Spread jam on the solid cookies. Top each with a holed cookie, pressing gently. Dust with powdered sugar before serving
