Stuffed Lamb Rib with Potatoes
Ingredients
- 3 kg lamb rib
- 3 kg small or medium potatoes
- 2 tablespoons salt
- 1 tablespoon black pepper
- 2 tablespoons mixed spices
- 2 tablespoons turmeric
- 2 tablespoons coriander
- 1 tablespoon cardamom
- 1 teaspoon saffron
- 4 bell peppers
- 2 rosemary sprigs
- 1 large onion, quartered
- 1 head garlic, sliced
- 1/2 cup olive oil
Preparation
Heat the oven to 200 degrees and prepare a suitable tray for the rib.
In a bowl, mix salt, pepper, mixed spices, turmeric, coriander, cardamom, and saffron.
Spread some of the spice mixture on the lamb rib.
Apply the remaining spices to the potatoes.
Stuff the lamb rib with potatoes, rosemary, onion, and garlic.
Drizzle olive oil over the lamb rib.
Cover the lamb rib lightly with aluminum foil.
Place the lamb rib in the oven for two hours.
Tips
Use a brush to distribute the juices that drip from the rib during cooking to moisten the surface.
