Sauteed Veggies and Rainbow Pasta

Ingredients

  • 2 Tbsp vegan butter
  • 1/2 basil
  • 1/4 pepper
  • 1/4 salt (added at the end)
  • 1 zucchini squash
  • 1 yellow squash
  • 6 baby portobello
  • 2 carrot
  • 1 red onion

Accompaniments

  • Angel hair pasta spinach, red pepper and regular
  • vegan Parmesan cheese

Preparation

  1. Cook the angel hair pasta according to package instructions

  2. Melt the vegan butter in a skillet over medium heat

  3. Add the vegetables and sauté until tender, adding salt at the end

  4. Serve the sautéed vegetables with the cooked pasta and sprinkle with vegan Parmesan cheese

Notes
