Creamy Chickpea and Spinach Tikka Masala
Ingredients
- 1 jar Tikka Masala sauce
- 1 cup canned chickpeas, drained
- 1/4 cup water
- 4 cups baby spinach
- Cooked quinoa, for serving
- Fresh parsley and roasted peanuts, for garnishing
Preparation
Add the Tikka Masala sauce and water to a large pan over medium heat. Stir and bring to a simmer.
Add in the drained chickpeas, stir together, then lower the heat to medium and simmer for around 10 minutes, stirring occasionally.
Add in the baby spinach and cook for another 5 minutes.
Serve the Tikka Masala over cooked rice or quinoa and garnish with fresh parsley and roasted peanuts.
