Creamy Chickpea and Spinach Tikka Masala

Ingredients

  • 1 jar Tikka Masala sauce
  • 1 cup canned chickpeas, drained
  • 1/4 cup water
  • 4 cups baby spinach
  • Cooked quinoa, for serving
  • Fresh parsley and roasted peanuts, for garnishing

Preparation

  1. Add the Tikka Masala sauce and water to a large pan over medium heat. Stir and bring to a simmer.

  2. Add in the drained chickpeas, stir together, then lower the heat to medium and simmer for around 10 minutes, stirring occasionally.

  3. Add in the baby spinach and cook for another 5 minutes.

  4. Serve the Tikka Masala over cooked rice or quinoa and garnish with fresh parsley and roasted peanuts.
