Creamy Mushroom and Spinach Pasta

Ingredients

  • 160-200g gf pasta (serves 2)
  • 150 mushrooms
  • 2 garlic cloves
  • 1 shallot or small white onion
  • 1-2 tsp nutritional yeast
  • 1/2 cup dairy free cream
  • 1/2 cup veggie stock
  • 2 large handfuls of spinach

Preparation

  1. Cook the pasta according to package instructions until al dente

  2. In a large pan, sauté garlic and shallot or onion in oil over medium heat until fragrant

  3. Add mushrooms and cook until softened and browned

  4. Stir in veggie stock, dairy-free cream, and nutritional yeast; simmer to create a creamy sauce

  5. Add spinach and cook until wilted

  6. Combine the cooked pasta with the sauce and mix well

  7. Serve immediately, optionally garnished with extra nutritional yeast or herbs
