Creamy Mushroom and Spinach Pasta
Ingredients
- 160-200g gf pasta (serves 2)
- 150 mushrooms
- 2 garlic cloves
- 1 shallot or small white onion
- 1-2 tsp nutritional yeast
- 1/2 cup dairy free cream
- 1/2 cup veggie stock
- 2 large handfuls of spinach
Preparation
Cook the pasta according to package instructions until al dente
In a large pan, sauté garlic and shallot or onion in oil over medium heat until fragrant
Add mushrooms and cook until softened and browned
Stir in veggie stock, dairy-free cream, and nutritional yeast; simmer to create a creamy sauce
Add spinach and cook until wilted
Combine the cooked pasta with the sauce and mix well
Serve immediately, optionally garnished with extra nutritional yeast or herbs
