Creamy Vegan Pumpkin Spice Latte Delight
Ingredients
- 1/4 cup pumpkin puree
- 3/4 tsp pumpkin spice mix
- 1 1/2 tbsp maple syrup
- 1 1/2 cups almond, coconut, or oat milk
- 1-2 shots espresso (use decaf for a caffeine-free version)
- Store-bought or homemade coconut whipped cream (optional, for decorating)
Preparation
In a saucepan, combine the pumpkin puree and pumpkin spice mix.
Gently simmer the mixture over low heat for about 2 minutes, stirring constantly, until a fragrant aroma develops.
Add the maple syrup and your choice of almond, coconut, or oat milk to the saucepan.
Continue heating the mixture over low to medium heat, stirring frequently, for about 3-4 minutes until it is well mixed and warmed through.
If you're using coffee or espresso, add it to the mixture and stir to combine.
Pour the latte into a tall glass or mug.
Optionally, top the latte with coconut whipped cream for an extra creamy touch.
Sprinkle an additional dash of pumpkin spice on top of the whipped cream.
