Easy Poached Egg on Avocado Toast

Ingredients

  • 1 egg
  • 1 tablespoon vinegar
  • Water (for poaching)
  • 1 slice sourdough bread
  • 1/2 avocado
  • Red pepper flakes (to taste)
  • Tomatoes (chopped, to taste)
  • Jalapeños (sliced, to taste)

Preparation

  1. Optionally, separate the egg white through a fine strainer to remove wispy parts and place in a ramekin.

  2. Bring a pot of water to a boil, add 1 tablespoon of vinegar, reduce to a simmer, swirl the water in a circle, and carefully add the egg.

  3. Cook the egg for 3-4 minutes, then scoop it out with a spoon.

  4. Toast a slice of sourdough bread.

  5. Mash half an avocado and spread it on the toasted bread.

  6. Top with the poached egg, red pepper flakes, chopped tomatoes, and sliced jalapeños.
