Easy Roasted Vegetable Soup

Ingredients

  • 1 onion
  • 1 red pepper
  • 3 small sweet potatoes or 1 large one
  • 250g tomatoes
  • 2 garlic cloves
  • 1 tsp chilli powder
  • 1 tsp cumin
  • 1 tsp oregano or mixed herbs
  • 1 tsp paprika
  • A generous pinch of black pepper
  • 250-300ml vegetable stock

Preparation

  1. Preheat the oven to 180 degrees.

  2. Place all the veggies on a baking tray. Sprinkle over the herbs and spices. Optionally, add a drizzle of oil. Toss the veg to coat them in the spices and bake for 25 to 30 minutes.

  3. Once the veg is cooked, add them to a food processor or blender with the stock and black pepper. Blend until smooth. If desired, add more water for a thinner soup.
