Easy Roasted Vegetable Soup
Ingredients
- 1 onion
- 1 red pepper
- 3 small sweet potatoes or 1 large one
- 250g tomatoes
- 2 garlic cloves
- 1 tsp chilli powder
- 1 tsp cumin
- 1 tsp oregano or mixed herbs
- 1 tsp paprika
- A generous pinch of black pepper
- 250-300ml vegetable stock
Preparation
Preheat the oven to 180 degrees.
Place all the veggies on a baking tray. Sprinkle over the herbs and spices. Optionally, add a drizzle of oil. Toss the veg to coat them in the spices and bake for 25 to 30 minutes.
Once the veg is cooked, add them to a food processor or blender with the stock and black pepper. Blend until smooth. If desired, add more water for a thinner soup.
