Nigerian Yam with Spicy Tomato Sauce
Ingredients
- 1 yam
- 1 red onion
- 3 Pepe (hot peppers)
- Pinch of curry powder
- Salt
- 1 Maggi Cube (seasoning cube)
- 6 handfuls of tomatoes
- 2 handfuls of green leaf (e.g., spinach)
- 6 tablespoons of red oil (palm oil)
- Splash of olive oil
Preparation
Boil the yam in water until it becomes soft.
Cut the red onion into small pieces.
Chop the Pepe into tiny pieces.
Cut the tomatoes into small pieces.
Fry the Pepe and onion in a splash of oil.
Add the tomatoes and let them cook until soft and well-cooked.
Add a bit of curry powder, Maggi Cube, and a good amount of salt (should be salty).
Add the red oil (a generous amount).
Let the sauce cook for another 10-15 minutes.
Wash the green leaf and cut it into small pieces.
Mix the green leaf into the sauce and let it cook for a few more minutes.
Serve the boiled yam with the spicy tomato sauce.
