Chipotle Loaded Sweet Potato Fries

Ingredients

  • 3 large sweet potatoes
  • 1 tablespoon olive oil
  • 1-2 teaspoons chipotle seasoning
  • 1 cup cooked or canned black beans
  • 2 tomatoes, chopped
  • Small red onion, chopped
  • 1/2 cup grated dairy-free cheese
  • Dairy-free sour cream, for serving
  • Guacamole, for serving
  • Fresh coriander, for garnishing
  • Chili flakes, for garnishing

Preparation

  1. Preheat the oven to 200°C and line a baking tray with parchment paper.

  2. Peel the sweet potatoes and cut them into desired chip shapes.

  3. In a large mixing bowl, toss the sweet potatoes with olive oil and chipotle seasoning until evenly coated.

  4. Arrange the potato chips on the prepared baking tray and bake for 20 minutes or until crispy and tender.

  5. Remove the tray from the oven and add black beans, chopped tomatoes, and onions. Sprinkle grated dairy-free cheese on top.

  6. Return the tray to the oven for another five minutes or until the cheese has melted.

  7. Serve the loaded sweet potato fries warm, garnished with fresh coriander. Serve with dairy-free sour cream, guacamole, and sprinkled chili flakes on top.

  8. Dig right in and enjoy!
