No-Bake Gluten-Free Chocolate Bars

Ingredients

Base

  • 240g gluten-free oats
  • 100g Medjool dates
  • 100g coconut oil

Caramel

  • 400g dates
  • 100g coconut oil
  • 100g salted peanut butter

Chocolate coating

  • 200g sugar-free dark chocolate, melted

Preparation

  1. Blend oats until you have a flour-like consistency

  2. Add dates and coconut oil until well combined

  3. With fingers press the mass into a rectangular pan layered with baking paper

  4. Put in the fridge

  5. For the caramel, soak dates in hot water for 20 minutes

  6. Combine them with peanut butter and oil in the blender until you reach a sticky mass

  7. Spread caramel over the bottom and freeze for 1 hour

  8. Slice into rectangular bars and cover with the melted chocolate
