Pecan Oat Energy Balls

Ingredients

  • 1 cup pitted dates
  • 1/2 cup pecans
  • 1/2 cup gluten-free oats
  • 2 tbsp coconut oil
  • 1 tsp vanilla

Preparation

  1. Combine all ingredients in a food processor and blend for 30-60 seconds.

  2. Form the mixture into balls to make approximately 12 energy balls.

  3. Freeze the balls for 30 minutes.

  4. Store in the fridge and enjoy for up to a week.
