Mint Chocolate Energy Bites

Ingredients

  • 1 cup dates (soaked in water for 10 mins)
  • 1 cup pecans (walnuts or almonds work too)
  • 1/4 cup cocoa powder
  • 1 tsp vanilla
  • 1/2 tsp mint extract
  • 1/4 tsp salt

Preparation

  1. Blend all ingredients in a food processor; scoop, squeeze & roll into balls; place {& store} in the fridge for 30 mins
