Mint Chocolate Energy Bites
Ingredients
- 1 cup dates
- 1 cup pecans (walnuts or almonds work too)
- 1/4 cup cocoa powder
- 1 tsp vanilla
- 1/2 tsp mint extract
- 1/4 tsp salt
Preparation
Soak dates in water for 10 minutes.
Blend all ingredients in a food processor.
Scoop, squeeze and roll into balls.
Place and store in the fridge for 30 minutes.
