Mint Chocolate Energy Bites
Ingredients
- 1 cup dates (soaked in water for 10 mins)
- 1 cup pecans (walnuts or almonds work too)
- 1/4 cup cocoa powder
- 1 tsp vanilla
- 1/2 tsp mint extract
- 1/4 tsp salt
Preparation
Blend all ingredients in a food processor; scoop, squeeze & roll into balls; place {& store} in the fridge for 30 mins
