Lemon Chia White Chocolate Balls

Ingredients

  • 1 cup raw cashews
  • 1/2 cup desiccated coconut
  • 1/2 cup ground almonds
  • 1/2 cup pitted dates
  • zest of 1 lemon
  • juice of 1/2 large lemon
  • 1/2 tsp vanilla paste or extract
  • 1 tbsp melted coconut oil
  • 1 tbsp chia seeds
  • 50g White chocolate

Preparation

  1. Add the cashews, ground almonds and coconut to a food processor and pulse until the cashews have been ground down.

  2. Add the remaining ingredients and pulse until combined. Do not over-process - there should still be some texture, not completely smooth.

  3. Yield 10-12 balls and place on baking paper on a baking tray. Melt the white chocolate and drizzle it over the balls. Leave to chill in the fridge for 1 hour and enjoy.
