Lemon Chia White Chocolate Balls
Ingredients
- 1 cup raw cashews
- 1/2 cup desiccated coconut
- 1/2 cup ground almonds
- 1/2 cup pitted dates
- zest of 1 lemon
- juice of 1/2 large lemon
- 1/2 tsp vanilla paste or extract
- 1 tbsp melted coconut oil
- 1 tbsp chia seeds
- 50g White chocolate
Preparation
Add the cashews, ground almonds and coconut to a food processor and pulse until the cashews have been ground down.
Add the remaining ingredients and pulse until combined. Do not over-process - there should still be some texture, not completely smooth.
Yield 10-12 balls and place on baking paper on a baking tray. Melt the white chocolate and drizzle it over the balls. Leave to chill in the fridge for 1 hour and enjoy.
