Peach Ice-Cream Bites

Ingredients

  • 1 cup ice cream {I used @foragerproject vanilla}
  • 2 ripe peaches
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 3 tbsp. coconut sugar
  • 1/4 cup almond milk

Preparation

  1. In a large bowl, stir together the almond flour, coconut flour, coconut sugar, and almond milk until a dough forms.

  2. Use a cookie scoop to evenly distribute the dough into cupcake liners {I made 7.}

  3. Combine the ice cream and diced peaches in a blender and pour over the dough cups {you will have a little extra left, so you can make extra cups with it or drink it like I did haha}

  4. Freeze for at least an hour before enjoying!
