Quinoa Lentil Soup
Ingredients
- 1 cup green lentils
- 1/4 cup red lentils
- 1/2 cup quinoa
- 3 medium carrots, chopped
- 3 celery ribs, chopped
- 1/4 cup diced fresh fennel (optional)
- 1 heaping tsp green curry paste
- 1 diced medium onion
- 1 tbsp minced garlic
- 1 inch nub of fresh ginger, minced
- 4 cups of vegetable broth
- 2 cups of water
- 1 tbsp dried thyme
- 1 tbsp smoked paprika
- 2 bay leaves ?
- salt & pepper to taste .
Preparation
Sauté onions, celery and carrots in a large pot with a pinch of salt to help sweat them
When onions are translucent add in fennel, ginger, garlic, and curry paste, sautéing until fragrant, about 2 minutes
Add in tomatoes, both kinds of lentils, thyme, bay leaves, paprika, water and broth
Bring mixture to a boil then reduce to a simmer and cook for about 30 minutes or until lentils fully soften
Finish off with some salt and pepper to taste and serve with fresh parsley
I also added some hemp hearts as well, left overs from a big batch I bought when they were on sale
The curry paste is by the brand Thai Kitchen, which I found in the ethnic aisle of my supermarket
Overall, didn't take much time to get this soup together, which is always a bonus
