Quinoa Lentil Soup

Ingredients

  • 1 cup green lentils
  • 1/4 cup red lentils
  • 1/2 cup quinoa
  • 3 medium carrots, chopped
  • 3 celery ribs, chopped
  • 1/4 cup diced fresh fennel (optional)
  • 1 heaping tsp green curry paste
  • 1 diced medium onion
  • 1 tbsp minced garlic
  • 1 inch nub of fresh ginger, minced
  • 4 cups of vegetable broth
  • 2 cups of water
  • 1 tbsp dried thyme
  • 1 tbsp smoked paprika
  • 2 bay leaves ?
  • salt & pepper to taste .

Preparation

  1. Sauté onions, celery and carrots in a large pot with a pinch of salt to help sweat them

  2. When onions are translucent add in fennel, ginger, garlic, and curry paste, sautéing until fragrant, about 2 minutes

  3. Add in tomatoes, both kinds of lentils, thyme, bay leaves, paprika, water and broth

  4. Bring mixture to a boil then reduce to a simmer and cook for about 30 minutes or until lentils fully soften

  5. Finish off with some salt and pepper to taste and serve with fresh parsley

  6. I also added some hemp hearts as well, left overs from a big batch I bought when they were on sale

  7. The curry paste is by the brand Thai Kitchen, which I found in the ethnic aisle of my supermarket

  8. Overall, didn't take much time to get this soup together, which is always a bonus
