Strawberry Quinoa Summer Salad
Ingredients
- arugula
- French style green beans
- quinoa
- chickpeas
- sweet corn
- strawberries
- mandarins
- red onion
- toasted pecans
- fresh parsley
- fresh basil
- fresh mint
Vinaigrette
- 1/4 cup orange juice
- 1/4 cup balsamic vinegar
- 2 tablespoons extra virgin olive oil
- juice of 1/2 lemon
- 1 teaspoon minced fresh ginger
- 1/2 teaspoon dried parsley
Preparation
Cook quinoa according to package instructions and let it cool.
Blanch the French style green beans for 2-3 minutes in boiling water, then cool them under cold water.
Halve the green beans, quarter the strawberries, section and halve the mandarins, and thinly slice the red onion.
Toast the pecans if they are not already toasted.
Combine all vinaigrette ingredients in a blender or food processor and puree until smooth and emulsified.
In a large bowl, add all salad ingredients.
Drizzle the vinaigrette over the salad and toss to combine.
