Sunken Apple Cake with Almonds
Ingredients
- 250 g spelt flour
- 100 g raw cane sugar
- 50 g coconut blossom sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 125 g vegan butter (room temp.)
- 250 g apple sauce
- Almond slivers
- 4-5 apples
Preparation
Add vegan butter and sugars to a mixing bowl and beat until creamy. Slowly mix in the apple sauce.
In a separate bowl, mix spelt flour, baking powder, baking soda, cinnamon, and salt.
Slowly add the flour mixture to the sugar-butter mixture while mixing on medium speed with a hand mixer. Mix until well combined.
Evenly spread the batter in a greased and floured baking tin (26 cm).
Peel and core the apples. Cut apples in half and thinly slice each half lengthwise without cutting all the way through.
Press apple halves onto the batter and sprinkle with almond slivers.
Bake for 40 minutes at 180°C. Let cool and enjoy!
