Baked Vegan Bang Bang Cauliflower

Ingredients

  • 1 cauliflower
  • 1 cup vegan milk + 1 tbsp apple cider vinegar
  • 1 cup flour (regular / gf / buckwheat…)
  • 1/2 cup cornstarch
  • Paprika, garlic powder, salt & pepper to taste
  • 1 cup panko breadcrumbs
  • 1/2 cup vegan mayonnaise
  • 1/3 cup sweet chili sauce (or chili paste & maple syrup)
  • 4 tbsp chopped cilantro

Preparation

  1. Preheat the oven to 220°C or 430°F.

  2. Break cauliflower into bite-size pieces after removing leaves and stems.

  3. Create buttermilk by mixing vegan milk and vinegar; let it sit for 5 minutes, then combine with flour, cornstarch, and spices, whisking well.

  4. Coat the cauliflower in the batter, mix in the breadcrumbs, and spread on a parchment-lined baking sheet.

  5. Bake for 20-25 minutes until crispy and golden.

  6. Meanwhile, whisk together vegan mayonnaise, sweet chili sauce, and chopped cilantro for the sauce.

  7. After baking, let the cauliflower cool for 5 minutes, then toss in the sauce and serve.
