Extra Creamy Hummus Dip

Ingredients

  • 2 cans organic chickpeas
  • 1 cup good quality tahini
  • Juice from one large lemon
  • Chickpea juice from the can
  • 3-4 cloves garlic
  • 1-2 teaspoons salt
  • 1 teaspoon pepper

Preparation

  1. Drain one can of chickpeas and reserve the liquid from the second can.

  2. Blend all ingredients in a Vitamix blender until smooth and creamy.

  3. Transfer the hummus to a shallow bowl and garnish with chopped purple onions, roasted chickpeas, cherry tomatoes, fresh parsley, lemon wedges, and crushed red pepper.

  4. Serve with warm pita bread.
