Gluten-Free Vegan Pine Cone Brownies
Ingredients
- Fudgey brownie mix of choice (Simple Mills recommended)
- Sliced almonds (or cereal flakes as alternative)
- 9 oz chocolate chips (Hu Kitchen Hu Gems recommended)
- 1-2 tsp coconut oil (adjust based on chocolate thickness)
- Powdered sugar or powdered monk fruit
Preparation
Make the brownie mix according to its instructions, ensuring not to overbake so it remains gooey in the middle, then let it cool for a few minutes.
Form the baked brownie mixture into about 12 cone shapes, similar to cake pops.
Carefully place sliced almonds in and around the brownie cones to create a full pine cone appearance with scales.
Place the pine cones on a parchment-lined sheet pan and freeze for 30 minutes.
Melt the chocolate chips with coconut oil in the microwave in 30-second increments or using a double boiler.
Remove the pine cones from the freezer and carefully coat each one with the melted chocolate, then place back on parchment to set.
Sprinkle powdered sugar on top for a frosted look and enjoy.
