Healthy Edible Cookie Dough with Chickpeas

Ingredients

  • 15 oz canned chickpeas
  • 1/3 cup natural smooth peanut butter
  • 2 Tbsp pure maple syrup
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 pinch kosher salt

Optional add-ins

  • nuts
  • chocolate chips
  • sprinkles
  • coconut shreds

Preparation

  1. Peel the skin off the chickpeas.

  2. Dump all the ingredients into a food processor.

  3. Process until smooth, scraping the sides a few times.
