Hummus Carbonara with Mushrooms and Pasta
Ingredients
- 3 tbsp hummus
- 200g sliced button mushrooms
- 2 garlic cloves
- 1 tbsp olive oil
- 50ml almond milk
- 2 tbsp nutritional yeast
- Handful of chopped greens (spinach and kale)
- 250g brown rice pasta
- Salt and pepper
Preparation
Start cooking the pasta according to package instructions.
Fry the mushrooms and garlic in olive oil for about 5 minutes or until softened and browned.
Add the greens to the pan and mix well.
Add hummus, almond milk, nutritional yeast, salt, and pepper; mix to combine.
Once pasta is cooked, add it to the pan, loosen with pasta water if needed, and coat in the sauce.
Notes
This dish tastes better than it sounds and is packed with protein, fibre, folate, and vitamin D.
