Pumpkin Spice Oatmeal Bars
Ingredients
- 3 c quick oats
- 1 tsp baking powder
- 1 tsp pumpkin pie spice
- 2 tsp ground cinnamon
- Pinch of salt
- 1 c canned pumpkin puree
- 1/3 c unsweetened applesauce
- 1/3 c melted coconut oil or butter
- 1/3 c maple syrup
- 1/4 c brown sugar
- 1 tsp vanilla extract
- 3/4 c chocolate chips
Preparation
Preheat oven to 350 degrees Fahrenheit. Grease a 9-inch pan and add parchment paper.
Pulse oats in a blender about 5 times to break them up slightly.
Pour the mixture into a large bowl and add all other ingredients. The dough will be thick.
Press the dough into the pan and add a few extra chocolate chips on top.
Bake for 25 to 28 minutes until set.
Allow to cool and then put in the fridge to set more.
